A Day in Dallas – Defined by Guacamole

Chef Chris Southwick, Executive Assistant Manager of Culinary and Food & Beverage and resident Guacamologist™,  prepares a fresh, Texas tradition at 6 p.m. in The Ritz-Carlton lobby.

At 6 every evening, The Guacamologist™ at The Ritz-Carlton wheels his cart into the lobby and begins to do what Texas does best: whip up fresh guacamole and margaritas. These complimentary treats define the day for all those lucky enough to be in The Ritz lobby.

Just before The Ritz-Carlton opened in 2007, the team spent over a month brainstorming what they wanted their “defining moment” to be. Every Ritz-Carlton has one: A local Native American flautist plays for guests as the sun sets at The Ritz-Carlton in Dove Mountain, Arizona. A Marshmallowist™ creates homemade marshmallows and talks about the history of marshmallows as guests craft their s’mores at The Ritz in Lake Tahoe.

Such defining moments capture the spirit of the area and honor its history and culture. So what to do in Dallas?

It all clicked when someone brought guacamole to the meeting.

“When people think about Texas, they think about cowboys and Tex-Mex, the rougher edge of Texas,” says Alex Baker, Marketing Communications Manager at The Ritz-Carlton Dallas. “We wanted to elevate that experience and display the true spirit of Texas.”

The hotel also offers the opportunity to participate as a Guest Guacamologist™. When food-enthusiasts visit, they can work alongside the chef as he mixes the evening’s guacamole.

“Just recently two young boys, who acted well beyond their years in their love for food, were staying with us,” Baker says. “We made mini Guest Guacamologist™ aprons for them, and they stood on step stools and helped the chef one evening. They loved it!”

The chefs themselves love the tradition as well. It provides them with an opportunity to step outside the kitchen and interact directly with guests. Curious what their secret ingredient is? Roasted garlic gives the guacamole a sweet and tangy taste.
